Chocolate cookie 70% Venezuela

Our favourite cookie: browned butter, generous chunks of 70% dark chocolate and Maldon salt flakes. Crisp at the edges, soft in the middle.

The chocolate is the same one we use in our pain au chocolat: made bean-to-bar by Puchero (Valladolid) with Trinitario and Criollo-type cacao from Sur del Lago, Venezuela. Round, with notes of fresh fruit and nuts.
