Pain au chocolat
A first cousin of the croissant, the pain au chocolat is a laminated pastry with an open, airy crumb. The dough is made with PDO butter from a small cooperative in Charentes Poitou (western France, near Brittany)
Inside lies the magic: a 70% chocolate with notes of pear, liquorice and flowers, made with cocoa from small producers at the El Castillero estate in southern Nicaragua. Once harvested, the cocoa joins the Fair Trade programme. Puchero – based in Valladolid – lovingly crafts this superb 70% chocolate by hand.
