Local Honey - Dolça Abella (2 varieties)
Dolça Abella is a project born of the passion of Laura and Sergi, a couple devoted to beekeeping. In their small family business they produce honey, pollen, propolis and wax, in the very heart of Pla de l'Estany (Girona). Their little workshop and shop is in Crespià, where they handle with great care this ingredient the bees give us.
From the Costa Brava to the Pyrenees, their more than 300 honeycombs are spread across different counties of Girona, and they manage the hives in a sustainable, integrated way.
How do you turn honey into a cream? The team at Dolça Abella explain that the cream is obtained by mechanically whipping the honey crystals while cold. Once this sugar naturally present in the honey has been whipped and crystallised, the result is a creamy honey, perfect for spreading on bread.
