Our neighbours Rooftop Smokehouse smoke, ferment and cure at the Fàbrica Lehman, where they restored an 1850 chimney that became their workshop's new smoke stack. They work only with ethically sourced, high-quality ingredients.
Pastrami, cured and then smoked for 18 hours using traditional techniques over whole logs.
